Last minute healthy touchdown worthy Super Bowl appetizer ideas
Time is running out on the clock but you still have time to make some easy and also healthy appetizers before game time! This years Super Bowl celebrations may look quite different that those in the past, yet can still be celebratory and delicious! My family requestedI healthy options and here are a few that you might enjoy at your viewing party tonight. I have also included a grocery list if you need to hurry and run out for the needed items!

Meatballs ( gluten-free)
1 lb ground beef
1/4 cup fresh basil
1/4 cup cashews
1 Tbsp lemon zest
1 egg
1 tsp dried oregano
1/2 tsp salt
1/2 tsp pepper
1 tsp arrowroot
1/2 tsp red pepper flakes
2 pc bacon if you desire
1 jar marinara sauce ( I prefer Raos)
Blend in food processor Basil cashews and lemon zest
Add to meat, egg, oregano , salt and pepper, arrowroot and red pepper flakes (add chopped raw bacon if you want )
Roll into balls and place in greased baking dish . Bake in 425 degree oven until golden brown. Turn down heat and pour sauce over top . Cook a bit more and top with pieces of basil.
Buffalo Chicken Bites
1/3 cup Franks hot sauce
2 Tbsp lite mayo
2 Cups Rotisserie chicken white meat shredded
4 celery stalks cut into 3 inch pieces
Crumbled blue cheese
Lite ranch dressing
Low fat Mayo
1/3 cup crumbled blue cheese
Ranch for drizzling
Chives for garnish
In s medium bowl mix together hot sauce and mayo and season with salt and pepper.
Pour over chicken and mix to combine
Spoon chicken mixture into celery boats
Top with blue cheese crumbles and drizzle with ranch and chives.
Baked Carrot Fries with a Sriracha Mayo dipping sauce
4 carrots
2 Tbsp olive oil
2 tsp pepper
1 tsp kosher salt
1tsp garlic powder
1 tsp fresh thyme minced
1/2 Cup avocado Mayo
1/2 cup sriracha sauce
Preheat the oven to 425 degrees
Trim the ends off the carrots and halve crosswise. Halve the carrots lengthwise, then cut lengthwise again in half or thirds, depending on the size, to create equal-size sticks.
In a mixing bowl, toss together the carrots, olive oil, pepper, garlic powder, salt and thyme. Transfer to a baking sheet and spread into a single layer. Bake, flipping halfway through, until the carrots are cooked through and the edges begin to crisp, 18 to 20 minutes.
Meanwhile, mix together the sriracha and avocado Mayo in a small bowl. Serve the carrot fries with the Mayo
